The deep, extracted color of the 1993 Ypsilon makes it hard to believe that this is a wine made from Silvaner, a grape usually known for lighter style wines. The deep color is a result of the fact that the grapes for this rare and special wine were Auslese quality at harvest. These high quality, late picked grapes were aged in oak and vinified dry to produce a powerful, elegant wine that can stand up to robustly seasoned and deeply flavoured dishes.
